Cheese flan with bell pepper sauce and traditional balsamic vinegar from Modena
Ingredients for 4 persons:
Béchamel sauce 250 gr *
Mixed soft cheeses 100 gr
Eggs 3
Bell pepper 2
Parmesan cheese 30 gr
Traditional balsamic vinegar from Modena
Salt and pepper
Nutmeg
Potato 1
* Béchamel sauce:
Milk 250 gr
Flour 25 gr
Butter 25 gr
Salt, pepper and nutmeg
How to prepare:
Make a thick béchamel sauce and add the soft cheese and the parmesan. Season and dust with some nutmeg. At least add the eggs and pour the mixture into butter greased moulds and bake in the oven for 35-40 minutes at 180°.
Prepare the bell pepper sauce: cook very well a potato cut into slices together with the bell pepper. Once cooked add a spoon of extra virgin olive oil and whip until it gets well blended. Arrange the sauce on a serving platter and place over the hot cheese flans. Drizzle with some vinegar and add a drop of extra virgin olive oil. Garnish with chervil.
